The Croque Monsieur is the original ham and cheese sandwich, created in France. I’ve modified this recipe to be healthy and still just as delicious. For an interesting variation, the Croque Madame, you can add a fried egg to the top of each open faced sandwich.
- 2 slices whole wheat bread
- 2 teaspoons honey mustard
- 2 slices ham
- 2 slices Swiss cheese
- 1/8 cup skim milk
- 2 egg whites
1. Heat broiler in oven. Heat a non-stick skillet over medium heat.
2. Whisk egg whites and milk together.
3. Dip bread in egg mixture and place in skillet. Brown on both sides and remove from skillet.
4. Spread mustard on one side of each piece of bread. Place one slice of ham on each piece of bread. Place one slice of Swiss cheese on top of each slice of ham.
5. Place open faced sandwich on a cookie sheet and place under broiler. Cook just until cheese is melted.
6. Serve open faced.
